In this video, we share our recipe for mini banana bread muffins. Small bite sized morsels of banana bread goodness! The entire recipe is 19 points and can be split to as many as 40 mini muffins.

Ingredients:
3 Ripe Bananas (Mashed)
1/2 Cup of Greek Yogurt
1/2 Cup of Brown Sugar Splenda (24 Points)
1/2 Cup of Unsweetened Apple Sauce
1/2 Cup of Whole Wheat Flour (6 Points)
3/4 Cup of White Flour (9 Points)
1/2 Tsp of Salt
1 1/2 Tsp of Baking Powder
Instructions:
Take bananas and mash them in a bowl.
Add all other ingredients to the bananas.
Mix all ingredients together.
Spoon into mini muffin tins that has been sprayed with nonstick spray.
Bake in oven at 325F for 25 min or until done. (Please check every 5 minutes for your first time).

I have used this recipe for different kinds of muffins many times over the past year. I used this recipe as a base and add blueberries or strawberries. I sometimes also add 1/2 cup unsweetened cocoa powder or 1/2 cup peanut butter powder. I have used pumpkin puree instead of banana and added cinnamon, cloves and ginger. I also made it with grated carrots and cinnamon. I have found that by adding 2 tsp of baking soda they puff up more like a regular muffin. When I add the cocoa or pb powder it adds one point to 3 muffins. Thank you for this low point recipe!
