In this video, we share our recipe for our Turkey Meatloaf stuffed inside a spaghetti squash. Add our 0 point marinara sauce (https://www.wwgays.com/home/marinara-sauce) and you have a delicious meal that serves up to 4 people!

Ingredients:


Squash:

  • 1 Spaghetti Squash

  • Clubhouse Garlic Plus

  • Clubhouse Garlic & Roasted Red Pepper

  • Clubhouse Parmesan & Garlic

Meatloaf:

  • 454g of Extra Lean Ground Turkey

  • 1/2 Cup of Panko Breadcrumbs (3 Points)

  • 1/2 Cup of Nutritional Yeast (2 Points)

  • 1/2 Cup of Homemade Baked Quinoa (3 Points)

  • 1 Egg

  • Minced Garlic Paste

  • Clubhouse Sriracha & Lime

  • Clubhouse Garlic Plus

  • Clubhouse Garlic & Roasted Red Pepper

  • Clubhouse Parmesan & Garlic

  • Onion Powder

  • Garlic Powder

  • Pepper

  • 1/2 Cup Shredded Mozzarella Cheese (6 Points - Optional)

Instructions:

  1. Preheat oven to 450F.

  2. Take spaghetti squash cut it in half and remove the seeds and flatten the bottom by slicing part of the outer shell.

  3. Season the squash to taste.

  4. Bake for 15 minutes.

  5. Remove squash from the oven and pierce the flesh with a fork. 

  6. Take the tomato sauce and coat the bottom of the squash with a thin layer of the sauce.

  7. In a bowl, take the ground turkey and add one egg, bread crumbs, nutritional yeast, quinoa and spices of your choice and mix well.

  8. Take the meat and stuff the sauced squash and make sure it covers to the edge of the squash. 

  9. Cook for 30 minutes.

  10. Remove squash from oven and take more sauce and coat the top with a generous amount.

  11. Top with 1/3 of a cup of low fat mozzarella cheese.

  12. Bake for an additional 15 minutes until melted and golden.
