Quinoa Stir Fry

This easy recipe is healthy yet super filling! You can swap out any vegetables you like and make it to your own taste!

Ingredients:

Stir Fry Sauce:

  • Fresh Onion (1/4)

  • 1/2 of a Peach

  • 2 Tbsp of Soy Sauce

  • 1 Tbsp of Sriracha

  • 2 Tbsp of Chicken Broth

  • 1 Clove of Fresh Garlic

Stir Fry Vegetables:

  • Halved Snow Peas

  • Edamame

  • Fresh Corn

  • Carrots

Instructions:

  1. Prepare quinoa [see recipe]

  2. Prepare chicken breast or tofu [see recipe]

  3. Grab all stir fry sauce ingredients and mix in food processor until a puree, set aside

  4. Chop up one of the cooked chicken breasts

  5. In a frying pan sprayed with cooking spray, fry over medium heat: the edamame, carrots and corn

  6. Add some mango spice and garlic plus to taste.

  7. Add a bit of water to steam them up. 

  8. Add the cauliflower and then the snow peas. 

  9. Add the puree.

  10. Add the chicken breast. 

  11. Spoon into a bowl a cup of quinoa and then top with the chicken stir fry mixture.
